水飞蓟素最大的贡献是对肝细胞膜有稳定作用，它阻止或避免溶解的细胞成分(例如转氨酶)流失。水飞蓟素可限制某些肝毒性物质(如：α-鹅膏菌素)穿透进入细胞内部蛋白质合成能力的增强是由于水飞蓟素刺激细胞核中RNA聚合酶I的活性，因此帮助肝细胞中核糖体RNA的合成，同时导致结构和功能蛋白质(酶)的大量合成。因此，水飞蓟素可增强受损肝细胞的修复能力和再生能力。
